Bison Burgers with Chipotle Aioli

Bison is becoming more popular and easier to find at the grocery store. If you can’t find it, feel free to substitute regular ground beef.


  • 1 Cup Baby Arugula
  • 1/4 Cup Green Onion
  • 1 1/4 Pound Ground Bison
  • 4 Slices White Cheddar Cheese
  • 2 Tablespoon Butter, Unsalted
  • 4 Kaiser Rolls
  • 1 Teaspoon Chipotle Peppers In Adobo Sauce
  • Black Pepper
  • 1/4 Teaspoon Garlic Powder
  • Kosher Salt
  • 1 Teaspoon Seasoning Salt
  • 3 Tablespoon Extra Virgin Olive Oil
  • 1/3 Cup Mayonnaise
  • 3/4 Teaspoon Worcestershire Sauce

Prep Steps

  1. Cut the ends off the green onions and peel away any loose or damaged outer layers. Rinse under cold water and dry.
  2. Slice the green onions thinly to measure the indicated amount. Place in a large mixing bowl.
  3. Remove a chipotle pepper from the can. Slice down the center, scoop out the seeds and discard. Mince enough pepper to measure the indicated amount. Use more if you want more smoky spice. Avoid touching your face when handling peppers, and wash hands immediately after.
  4. Scoop mayonnaise into a small mixing bowl. Add some of the minced chipotle to the mayonnaise and stir to combine well. Add more chipotle if you prefer more spiciness.
  5. Slice kaiser rolls in half horizontally.
  6. If you bought a block of white cheddar cheese, cut 1 thin slice for each burger.
  7. Prepare a plate with layers of paper towels. Set plate near the stove for the cooked burgers.

Cook Steps

  1. Place ground bison in the large mixing bowl with the green onion. Add seasoning salt, garlic powder, Worcestershire sauce, black pepper and kosher salt. Use clean hands to combine thoroughly.
  2. Divide bison mixture into 1 equal portion per serving, about 5 ounces per serving. Shape into flat, round patties, approximately as wide as the buns you are using. Press them a little thinner in the center to prevent them from seizing into a ball when they cook.
  3. Heat a large saute pan over medium heat. Add the olive oil and butter and heat until butter is melted and foamy and oil is hot.
  4. Once butter is foamy and oil is hot, add the burger bun tops, insides down. Toast about 3-4 minutes until golden brown, then remove to a clean platter.
  5. Allow the pan to cool for a few minutes.
  6. Place the burger bun pan back over medium heat. Add olive oil and butter to the pan again, and repeat the toasting process with the bottom of the buns.
  7. Place the burger bun pan back over medium heat. Add a little more olive oil to coat the bottom of the pan and warm.
  8. Once oil is hot, gently add each burger patty. Cook about 3 minutes, then flip and cook another 2 minutes.
  9. After the burgers have cooked on the 2nd side for about 2 minutes, place a slice of cheddar cheese on top of each burger. Cover pan with lid or foil and cook another 2-3 minutes until cheese is slightly melted. Transfer to the plate lined with paper towels.
  10. To build the burgers, divide one tablespoon of chipotle mayonnaise between the top and bottom of each bun.
  11. Place a loose 1/4 cup of arugula leaves on top of the bottom bun, then top this with the cooked bison burger and the top of the bun.
  12. Transfer the burgers to dinner plates and serve warm!
